I've been eating these daily with a cup of herbal tea in the afternoon and this keeps my tummy from grumbling till dinner. I added a hit of protein powder which elevates them to energy ball status!
If you enjoyed my No-Bake Chocolate Truffles from a couple of years ago, then you'll love these ones. I just updated the recipe and made them even better.
You'll love these truffles for the following reasons:
- You don't have to turn on your oven!
- They are beautiful, festive and fun to make with a loved ones and little ones
- You can't screw them up, I've added troubleshooting tips in the recipe card below
- They are gluten-free, dairy-free and vegan
- They are blood sugar balancing and refined-sugar-free
- They are wonderfully satisfying and no one will have a clue they are healthy (cause I know some people won't try stuff that is too "healthy" right!?)
These freeze really well and can keep in the fridge for about a week. I actually love the texture of these truffles straight out of the freezer. Here's the recipe!

Ingredients
- 10 soft medjool dates, pitted
- 3/4 cup pecans or walnuts
- ¾ cup almond flour
- 1 tbsp ground cinnamon
- 1/3 cup raw cacao powder
- 1 scoop vegan chocolate flavoured protein powder*
- 1 tsp pure vanilla extract
- 1/4 cup water
- 3 tbsp maple syrup
- 1/2 cup dark chocolate chips
- Shredded coconut for rolling
- Raw cacao powder for rolling
Instructions
- Place dates, pecans, almond flour, cinnamon, raw cacao powder, protein powder, vanilla, water and maple syrup, in food processor. Pulse until it forms a ball-like sticky texture. Add dark chocolate chips and pulse just until combined.
- Form the dough into 1.5 inch balls and roll in coconut flakes or raw cacao powder.
- Store in the fridge for up to 2 weeks or the freezer for up to 3 months.
- Troubleshooting: If batter seems too wet or sticky add a touch more almond flour. If batter seems too dry to roll into balls, add another tbsp or two of water. Alternatively, add a tbsp or two more water until the texture is perfect for rolling into balls.
Notes
Makes 18-22 balls.
*These can be made without protein powder. Use half the amount of water if you omit the protein powder.

Well, these are delicious. Thank you, Joy. You're incredible! Merry Christmas!
ReplyThanks Jen! Merry Christmas to you too!
Made these sweet truffles several times and rolled them in hemp hearts for the cacao I used Josh Gitalis Elixir instead of the cacao and even hubby enjoyed! GH vanilla protein… So this last batch I wanted to cut back on the sweetness used 7 dates and 7 prunes and I love them! Nice afternoon snack with a cup of tea… Thank you Lela ❤️
ReplyThat's such a great idea with Josh's elixir powder! I'm gonna try that too, thanks for the tip!
