I am a chocolate lover and if this past month is any indication, I'm chocolate obsessed! I've been baking with a lot of raw cacao these days from my Chocolate Coconut Drops in the Be Merry & Joyous Holiday Guide to Double Chocolate Cookies and at the end of the month, I will have a Double Chocolate Protein Loaf. See? Told ya! My guess is you don't mind one bit.
This recipe for Chocolate Truffles (obviously, there's chocolate in there) deserves three cheers for its simplicity and yumminess! It's rich with chocolate and of course, it's also good for you because it's packed with goodness from pecans, almond flour, coconut and raw cacao.
The secret weapon in the simplicity of creating these truffles was my new KitchenAid Food Processor! As you might know, from my first two cookbooks, a food processor is a kitchen essential in my opinion. It's so versatile to make anything you want from soups to pestos, sauces, dressing, cookies and of course this recipe I'm sharing today - truffles.
A food processor is my go-to when I'm making raw cookies, energy balls or truffles because it chews up the ingredients effortlessly and with my new KitchenAid Food Processor nothing gets stuck on the bottom underneath the blade, even those sticky dates.
I love the fact I can toss the whole thing in the dishwasher and save time!!

ReplyInstead of the almond flour? Yes I think that would work! If they seem dry when you try to roll them you could just add a touch of water.
I just lately had to go gluten free, dairy free and sugar free. Wow! What a learning curve! So I tried these for when I just want a treat. I love them. Thank you. This will be on my Christmas sweet list.

Hello! How long do these truffles keep, and where would you store them?

Can I substitute pecans with some other nut like almond?

ReplyYou might not need to. If you find the batter isn't sticking you can add a touch of water to it. Enjoy!

ReplyHi Lisa, I'm not sure because I haven't calculated this information. You can put the ingredients into an app like my fitness pal that can probably give you a good estimate. Hope that helps!
