If there ever was a veggie that will make you FEEL good inside by eating it, it's kale. It has more nutritional value for fewer calories than almost any other food on planet earth! It is in season right now and I had it for dinner last night with my organic roasted chicken breast and sweet red pepper.

How to Enjoy It
Kale is great as a side dish. I cook very simple. So, last night, I sauteed it on medium heat in a pan, with fresh lemon, organic butter, black pepper, sea salt and a bit of water (or you could use white wine instead of water). It only takes 5 minutes to cook when the pan is hot.
It is important to cook kale for 2 reasons: 1. It is quite bitter raw and 2. It inactivates the "goitrogens" which are bad for your thyroid function.

I fell totally in love with Kale this past winter! Steamed, with some miso dressing poured over it. Eat with chopsticks and it tastes even better!
