This recipe has recently become one of my go-to’s because it’s ridiculously simple yet so satisfying. Whether I need a quick snack between meals, a little post-workout fuel, or a healthier after-dinner treat, these bars always hit the spot. Plus, Vienna and Walker love them too, so they never last long in our house!

No-Bake Chocolate Hemp Nut Butter Bars

Ingredients
- ½ cup Manitoba Harvest Hemp Hearts
- ½ cup coconut flour
- 1 cup almond flour
- 1 cup nut butter (almond, cashew or peanut)
- 2 tbsp coconut oil (for the base)
- 3 tbsp maple syrup
- 1 tbsp coconut oil (for the topping)
- ¾ - 1 cup chocolate chips
Instructions
- In a large bowl, mix the hemp hearts, coconut flour, and almond flour.
- In a small pot over low heat, melt 2 tbsp coconut oil, then whisk in the nut butter and maple syrup until smooth.
- Pour the wet ingredients into the dry and mix until a crumbly dough forms. Press firmly into an 8”x8” parchment-lined pan to create the base.
- In a small pot or double boiler, melt 1 tbsp coconut oil with the chocolate chips on very low heat. Stir until silky smooth.
- Pour the chocolate over the base and spread evenly. Freeze for about 1 hour or until firm.
- Let sit at room temp for 10 minutes before slicing into squares. Store in freezer or fridge. Keeps for up to 3 months in the freezer.
I've been keeping a batch in the freezer so I can grab one whenever I need a little pick-me-up. And honestly, they’re so good that I usually end up sneaking a bite before they’ve even fully set! 😆

Is there anything I can use to sub the almond flour?? These look delicious! but sensitive to almonds :/
ReplyYou could try oat flour, you may need to adjust the coconut oil a bit to make it stick.
