I love the simplicity of this salad bowl because it's packed with veggies and yumminess! There are no leafy greens in this salad and I did that on purpose because I was making this for my daughter, Vienna, and I specifically chose all of her favourite veggies!

I make this salad on weekends because it keeps really well for quick and easy healthy lunches during the week.

Please make sure you always use organic chickpeas, whether you use dried or canned. Otherwise, they may likely be contaminated with glyphosate, the main ingredient in the common weed killer, Round-Up, which is considered a likely carcinogen (cancer-causing) by the World Health Organization. You likely heard in 2018 there was a report released on popular brands of hummus and their glyphosate levels were shocking!
When I buy hummus, I always buy the organic version of Sunflower Kitchen' Hummus especially because my daughter is a hummus monster. Alternative, you can make your own hummus with organic chickpeas!

How do you keep your herbs fresh. I spend a lot of money on fresh herbs but they don't last long. What's your secret?
ReplyCut the bottoms off, and stick them in a mason jar with water and put them in your fridge like fresh cut flowers :)
