Rainbow Protein Salad

Ingredients
  • 1 radicchio, chopped
  • 1-2 hearts romaine lettuce
  • 1 sweet yellow pepper, chopped
  • 2 carrots, chopped
  • 4 tomatoes on the vine, chopped
  • Half cucumber, chopped
  • 1 cup cooked chickpeas (drained and rinsed)
  • 1 can flaked tuna or wild salmon, drained
  • Juice from 1-2 lemons
  • 1/3 cup extra-virgin olive oil
  • Sea salt + pepper to taste
Instructions
  1. Combine salad ingredients including radicchio, romaine, sweet yellow pepper, tomatoes, cucumber and carrots into a large bowl. Toss in chickpeas and tuna.
  2. In a small bowl, combine lemon juice and olive oil. Pour dressing ingredients over top of salad. Add sea salt and pepper to taste. Enjoy!
  3. Store any leftovers in the fridge. Keeps for one day.

Serves 4 as a side or 2 as a main
