I recently did a segment on Cityline all about collagen and I had so many people message me about this recipe, so I knew I had to get it up on the blog right away and love adding collagen to Matcha Lattes!
For the mamas out there, I already know what you're thinking! Can you give these cute little snowballs to your child? Well, I do! My daughter Vienna is 3 years old. But there is a catch. The amount that Vienna gets eating one ball is fairly minimal because I used two scoops of collagen in the whole entire batch. The full serving of collagen is meant for adults 18+. But if you are a grown up and you really want to get the full benefits for yourself, then taking it daily is recommended. ;)
And yes, these balls can be made without collagen. Just add 4 tablespoons more of almond flour or any flour of your choice in place of the two scoops of collagen.
Collagen is an incredibly effective protein for beauty, specifically skin hydration, reducing the appearance of fine lines and making your skin look more plump and fresh. I'm not gonna lie, these snowballs are kind of addictive but they are a great little power snack! These are a great choice especially if you've committed to making 2019 your healthiest year yet and you're ditching refined sugar (and all the hidden sources) from your grocery cart. I really love them with the Rise and Shine latte or as a dessert after dinner. They are sooooo yummy!
The coconut flakes and almond flour provide good fat, moderate plant-based protein, vitamin E, magnesium and tons of fibre. If you want to make these nut-free, you could swap any flour instead of almond flour.
These snowballs are naturally gluten-free and super tasty little balls! They taste like coconut macaroons.
They are paleo-friendly (if you use cacao nibs), and made with 100% whole food ingredients.
Here's my recipe for Collagen Chocolate Chip Snowballs.
*I provided a range of maple syrup in case you're like me and you prefer it a little less sweet. If it's not rolling into a ball easily though, you'll need to add a little more liquid.
If you are making these into squares, add 2-3 tbsp more coconut oil so they stick together. Press them into a small pan and freeze them for 2 hours.
Makes 14 balls.
Do you know what else I love about this recipe? Just how easy it is! You don't need any equipment. You need a bowl and you don't even need to turn on your oven. All you have to do is melt some coconut oil and then just combine everything in a bowl. They are best served chilled so I would recommend refrigerating before serving for a couple of hours.

Can you include a measured amount for the collagen? I use another brand that doesn't include a scoop and so I don't know how much to add.
Reply1 scoop is 10g of collagen and I used 2 so thatt would be 20g. Hope that helps! My guess is that's around 3-4 tbsp but the brand you have should say how many grams in a serving.

ReplyYes because the amount he'd be getting in a ball is relatively small. I give them to my daughter but she only had maybe 1 per day. Collagen however, taken as a daily supplement is meant only for 18+.
What brand of Matcha Powder do you use? Also what brand of Coconut Butter, Almond Milk and Bee Pollen and Raw Honey and Coconut Oil?

Just made these for my 3 year old during nap time. He’s going to flip when he wakes up! I put them in the freezer to keep my hands out #tooyummyforthekids #stayoutofmommystreats I will probably cut some of the maple syrup next time. They are a bit sweet for me!

Do you think you could you substitute the almond flour with coconut flour?
ReplyYes but it would be a lesser amount. Coconut flour expands a LOT when there is any liquid so it would be a bit of an experiment. My guess would be 2 tbsp of coconut flour. Let me know if you try it!
Could I use stevia instead of maple syrup? If so, how much would I use?
ReplyYou can but you may need to add some liquid from another source so they roll easily. You could use a couple of tablespoons of nut milk for instance. As for stevia, if you're using the liquid, try 10 drops into the batter and give it a taste test and add more as needed.
What are your thoughts on taking collagen when you're pregnant (not just in cookie form)?
ReplyHi Amy, there isn't any research to show that it's safe while pregnant, so best to avoid :)
Thanks Joy! I have been thinking about collagen for a while, but the CityLine segment won me over, when you talked about the volume of research that now exists:) I've been unable to locate this brand of collagen in the GTA...any advice?

I've seen it at Goodness Me, Sweet Potato and The Big Carrot so it seems to be well stocked at most health food stores. Maybe you've just been unlucky and going to the storees that don't yet have it :)

ReplyI do not, as I don't count calories, grams of fat/protein/carbs. But I'm sure you can put the ingredients through an app and find out.

The flavor of these are excellent, but mine was too crumbly to form into balls. Any suggestions? I only use 3 tablespoons maple syrup
ReplyI mentioned this in the recipe instructions that if they seem too crumbly then you probably need to add a bit more liquid. If you don't want to add more maple syrup next time then melt a bit more coconut oil and then freeze them. They should stick!
IS there something else I could substitute for the shredded coconut?

I made these with stevia and a couple of tablespoons of almond milk. Worked great. I am thinking a conversion to raspberry lemon somehow would be amazeballs though! :)

Can I use Multi Collagen from Dr Axe? I get a monthly supply, and I'm trying to find ways to use it.
ReplyI'm not familiar with that collagen, but as long as it's collagen peptides (hydrolyzed) then I say go for it!

This recipe is great! We have made it a few times and really enjoy it. I see that you indicate that you use the marine collagen from Genuine Health, however could you use bovine collagen as well?

These were very good. Joy is right, you might not want to use the full amount of the maple syrup, and I have a sweet tooth. I also added peanut butter to the balls to make them easier to roll. They were delicious though, even without the peanut butter.
