I remember when I was a kid how excited I would get when my mom would make popsicles for my brother and I. Even when it might have been as simple as pouring apple juice into a popsicle mold! The enjoyment of licking or slurping a freezing cold popsicle on a boiling hot day is perfection to me.
Whether your 65 or 16 months old, popsicles please everyone... at least in my family!
Aside from how giddy I get about popsicles, the other reason I created these recipes is that I'm always looking for creative ways to feed my daughter Vienna. I find that it's easy to get stuck in a rut of making the same foods you know your family will eat because then you don't have to really think about it. These pops will get you out of your same-foods-every-day-rut.
I've been making popsicles on a weekly basis for us and it's the perfect mid-afternoon snack for everyone (not just Vienna)! Plus they are packed with whole food ingredients which help me maintain balanced energy all day long and I feel good knowing Vienna is getting a treat that has no refined sugar and it's super good for her too.
The first recipe is for my Green Smoothie Popsicles. The McJordan's LOVE our morning smoothie because it's a quick way to have a delicious and nourishing breakfast so it only makes sense to try it as a popsicle too, right? ;) They are so tasty, your kids will not have a clue it's good for them.
The second recipe is my Berry Avocado Popsicles. These pops taste like berry ice cream but without the refined sugar and cow dairy that is problematic for many people.
The benefit of using coconut milk is that you still get a creamy, rich consistency like you'd get from cow's milk.
I personally don't really love popsicles that are "icy" I much prefer "creamy", so these are one of my favourites!
Here is my Green Smoothie Popsicle.
Packed with fiber and phytonutrients, these tasty popsicles will please everyone! This mixture makes 6 medium size popsicles, but of course it really depends on the size of your molds.
The next recipe is for my Berry Avocado Popsicle. I got the inspo for these popsicles from my Uber Creamy Raspberry Avocado Smoothie.
I didn't mention this in my video, but I highly recommend you add whole berries into the Berry Avocado Popsicle after you've poured the mixture into the molds. It looks super pretty!

ReplyI got my molds from homesense or winners. I have a couple of different ones so I have a variety of sizes.
Joy, I'm not sure if I missed it (child hanging from my leg), but where did you buy those popsicle molds from? And thank you for the yummy recipes! I'm lactose intolerant and these will be great!

ReplyHey Chicoine, I think you're asking what can you substitute for the coconut milk and avocado, yes? If it's an allergy, you could try almond milk for coconut and frozen banana for avocado, however please note that we have not tried it so we wouldn't be able to guarantee results. Hope that helps! Can you supplement the coconut milk, and what with, it is so.......... fattening?
ReplyHey Lorretta, You could try almond milk but we wouldn't be able to guarantee results as we haven't tried it. We personally love the coconut milk popsicles because they hold together better and make a creamier popsicle. Not to mention, coconut milk is a healthy fat and there are loads of health benefits to reap from it! I whiz them in my Vitamix, sometimes it is more like an ice cream texture/frozen dessert, how can I thin it out?
ReplyYou can add a little bit of warm water, or you could wait a few minutes for it to thaw. Enjoy Margaret!
I've been enjoying all the various blogger popsicles this summer, but just realized my old molds probably are not made with the best materials so am planning an upgrade, but the modern sizes are either too big or too small. I feel like Goldilocks! I'll keep looking for the perfect 2 ouncers in traditional popsicle shapes.
