In the McJordan household, we eat both coconut and sheep's milk yogurt and sometimes goat too. We don't do cow dairy yogurt because it doesn't agree with me (makes me puffy and constipated) and Walker doesn't really care either way.
Although, truth be told when we first started dating he was all about the Greek yogurt and after hanging out with me most of the time he stopped eating as much dairy and guess what? His digestion dramatically improved (no more farting). In fact, we have a fart-free household, lol. Well, maybe sometimes Vienna toots but it's not because she's eating Greek yogurt or slurping on cow's milk -- those are foods we just don't buy. Once in a while, I do buy grass-fed yogurt but more often than not we have the other options I just mentioned.
Farting aside, coconut yogurt is not expensive so I often buy it, but lately, I've been making it from scratch because it's a little bit cheaper than buying it every week and it's incredibly delicious.
You'll love how easy coconut yogurt is to make and when you watch my video you'll see exactly what I mean.
Based on the recent news about coconut oil you may be hesitant to make this yogurt, but rest-assured coconut products are incredibly healthy and can be part of a well-balanced diet.
Even though coconut oil and this yogurt are higher in saturated fat, the large majority of it comes from medium chain fatty acids which are proven to be beneficial for weight management, may reduce the risk of atherosclerosis and boost immunity.
The truth is, we need all types of fat to be healthy (excluding trans fats), even saturated fats. Saturated fat has many important roles:
And isn't it interesting to note that one of the richest sources of saturated fat in nature is mama milk! Which is why breastfeeding is incredibly important.
It's a myth that saturated fat causes heart disease and sadly, many conventional medical doctors are still simply not aware. Just google "lipid hypothesis" or check out this PubMed link and do your own reading so that you may come to your own conclusions, please. Then tell everyone you know, including your doctor ;)
Okay now that we got that out of the way, let's get to this recipe shall we? Then you can make my delicious Coconut Yogurt Parfait recipe from Joyous Detox!
*If you can't find capsules that are 30 billion. You can use 3 x 10 billion capsules.
Just make sure you use organic canned full-fat coconut milk because this recipe will not work with liquid coconut milk in a carton and might not work with homemade coconut milk either if you don't have enough of the fatty cream.
I LOVE Cha's Organic Coconut Milk because the flavour is incredibly rich and it's free from additives. If you live in the U.S and can't find Cha's, I also like Native Forest.

Hi Joy, I have been buying coconut milk kefir (it's rather costly) - I was on antibiotics recently and am working on rebuilding my gut flora. Your recipe sounds so easy and I'm going to try it. Question; do I still need to take my daily probiotic if I am eating this yogourt daily?
ReplyHey Jen, That's great! Fermented foods are a great way to proliferate good bacteria in the gut. You don't have to necessarily take your probiotic if you are eating this daily – although it doesn't hurt either :) We typically recommend people to get in 1 source of probiotics of fermented foods daily. I think that there might be a typo in your recipe.You have 2 cans of coconut yogurt but in the video you have two cans of coconut milk.

Can you use full fat coconut cream instead of coconut milk and get the same result?

After making the coconut yogurt, can I use it as a starter and just add more milk to it to make more? And if so, how long should I wait for that process?

I tried this last night but it was a total flop! :( The mixture was completely liquid after 12 hours. What could have gone wrong? I put it in the oven but turned the light on. Could the environment been too warm? I used 1 can full fat coconut milk
ReplySorry to hear it was a flop. That's super strange because the full fat cream of the coconut milk is super thick so it should maintain some of it's consistency and then will get thicker in the fridge. I would suggest just using it for a smoothie and trying again another day! Also, use the brands I suggested, that might make a difference too!
You should use 2 cans instead of 1. Recipe states to use 2 cans.

Hi there I used the exact amounts of ingredients as the repice and I just had the same situation as Jody:(. Used 2 cans of Organic Coconut Milk from Biona and 6 capsules of 10 bilion probiotics from BioCare (uk products). the milk was thick when I took it out from the can and at the end completely liquidish
The challenge with making your own ferments is that it's not an exact science. Bacteria behave differently depending on a variety of factors/conditions. I would suggest refrigerating the yogurt and it will thicken up a bit. If it doesn't then it sounds like you have more of a kefir consistency which is also amazing for gut health. Enjoy!
Did it last night, I did refrigerate my can before but did not get much solid in the end... Decided to give it a try (1 can and 2 capsules), put it on the top of my fridge but this morning it was super runny! Maybe it's the brand I used... Yours looks so much better than mine! I put it in the fridge so Îll check how it looks when I come back home tonight! Hope it got a littlebit more creamy then... Oh well!
ReplyIt will likely get thicker once you put it in the fridge because of the good fat in the coconut milk. Either way, I hope it tastes wonderful!
How would we track this in my fitness pal? Since the water is drained I'm thinking it changes fat grams etc... I made it and LOVE it. I'm trying to eliminate dairy and this can be my go to breakfast with fruit instead of Greek cow's milk yogurt but I don't want to increase my fat grams too much. Thanks
ReplyHey Cori, Not entirely sure about that one as we typically like to evaluate food from more of a qualitative perspective :) However if you wanted to find out the fat grams, it would likely be what it says on the can as there wouldn't be much fat left in the coconut water. I made this last night and put it in the fridge in the morning. I am home from work and wanted to have some but it is really hard. It is not smooth like yogurt. Any thoughts on what I did wrong?

Ahh total and I walked my mom through this recipe hers turned out perfectly ugh!! I think my coconut was to cold from the start so was hard to get out of the cans and then hard to mix it all togwtbe- was piecey and watery this morning - totally needed to let it come to room temp more I think before mixing it all- tastes good just looks nasty ha

Hello, I tried making this and followed directions but I cut the recipe in half. I left it in the oven overnight and it came out looking oily and soupy. What did I do wrong?
ReplyI would suggest adding some more of the coconut cream to thicken it up a bit. That might help. Also, when you put it in the fridge it should thicken a bit too.

Made this and it was amazing - thank you! Sweetened it with vanilla. Might add a pinch of salt next time to bring out the sweetness. Wondering what the recommended serving size for this would be? Roughly? It is quite a bit richer than normal / greek yogurt (e.g. one cup serving size), so just wondering what you would recommend. Thank you!

Don't you have to cook the milk to 180 degrees then cool down to 100 degrees then add in probiotics with some kind of sugar so the probiotics feed on the sugar ?

Hello, I left the cans of coconut milk in the fridge for several days and when I opened the first can, the milk was hard as a rock. Could I have left it in the fridge too long before trying to make it?
ReplyHey Michelle, Perhaps! It depends on the temperature of your fridge. But in that case, you could just leave it on the counter to come closer to room temperature (while ensuring the coconut cream still says separate). That should do the trick! :) Rachel - Joyous Health Team
Hi joy, love your blog so informative! I am in the process of making this yogurt I am using native Forrest brand simple no guar gum I left it in the fridge over night but it's still a little runny not quite as thick as yours if I put it in the freezer for a bit would that help to thicking it up? Also after you add probiotics and mix it can you eat it right away or do you have to let it sit? Just wondering the reason for it having to sit for 12 hours. Thanks, Michele

So glad you're enjoying all things Joyous Health :) Keeping it on the counter for 12 hours allows the coconut yogurt to ferment and proliferate with beneficial probiotic bacteria. Putting it in the freezer might help a bit but shouldn't need too long! This recipe is sensitive to temperature (i.e. Joy's fridge might be slightly colder than yours) so it may take some time to finesse it :) Hope that helps! Rachel - Joyous Health Team
Hi Joy! I bought the GH probiotics and just finished my first package of the 15 billion CFU. I didn't feel any difference while taking them. Is this normal, or should there be a noticeable difference in bloating, etc.? I'm on the fence about buying another package since I didn't feel any better while taking them.
ReplyHey Claire, Probiotics aren't something you will feel a huge physical difference from but it is still working it's magic in your digestive system :) With that said, the 15 billion dose might have been too low for you so you could definitely look to increase the dose to either 30 billion (taking 2/day) or the 50 billion probiotics they have available. ReplyHey Grace, It should be more thick and creamy. What brand did you use? This recipe can be a bit sensitive so it's best to go for a high-quality full-fat coconut milk. It might be helpful to leave it in the fridge for a bit longer. This is the easiest coconut milk yogurt recipe I have found. Could I use the Cultures for Health Vegan Yogurt Starter instead of the capsules? Also, could I incubate this in the Instant Pot on the yogurt setting?

Can’t wait to try it! My first batch was not successful ( probiotic was too old I believe) and found two YouTube clips that will steer me in the right direction. The other one uses the dull can vs. just the cream like you do so I’ll try both - I suspect yours will turn out more like Greek yogurt. Do no need for dehydrator or yogurt maker, huh? Guess that’s only for cows milk yogurt? Thanks!

I made this and I tasted great. Put it in the fridge and now it's grainy like that fat curdled What did I do wrong?
ReplyMmm, that's tough to say what went wrong. Usually something will curdle when it's heated not when it's refrigerated so I'm not sure what to suggest here. Maybe you left it out to ferment too long? It could be that the fat globules have solidified in your fridge. Take it out 15-20 minutes before you're going to eat it and see if that makes a difference. Good luck!
I only had one can and added a capsule of 60 Billion genuine health. Will that ruin it?

I followed the steps, but I'm not sure if my batch came out right. I used Thai Cooking full fat coconut milk in a can, and after taking it out of the fridge, there was a hard shell of coconut oil on top that didn't appear on the video recipe. I think it hindered my recipe because instead of a creamy consistency, it is more curdle-y. I left the yogurt in the oven, covered with plastic wrap overnight, and the yogurt has a sulfur smell to it. I used the same probiotics as the recipe, so I think my coconut milk is the problem. What type of coconut milk are you using?
ReplyHey Kayla, Yes we're finding this recipe is quite sensitive to the type of coconut milk you're using. We used Cha's Organics Full Fat Coconut Milk that comes in a BPA-free canned container. I attempted this recipe using cans of full fat coconut milk from SPROUTS. Two days in the frig and I did not get the consistency or separation you did. Can you recommend a brand or name the one you used for my next attempt. Love your videos. Thank you
ReplyI used Chas Organics full-fat coconut milk. Once you've refrigerated it, depending how much coconut fat vs water there is in the yogurt, it can get very hard in the fridge. You may need to let it sit on the counter a little to thaw.
Has my yogurt not turned out properly if it smells sulfury? It tastes and looks fine. I used 2 caps of the genuine health 50billion probiotic
ReplyHmmm, sulfur smell is usually like rotten eggs meaning something has gone off. Cheese smell on the other hand is a good thing! It's hard to say without sniffing it myself but it sounds like it's gone off. Was it in a really warm area?
Thanks for replying! I don't think it was too warm. Just in the oven like you mentioned. It was placed in at 930pm and the oven was off since 5pm. Its a pretty strong smell 😆. Rotten egg smell. But it does taste great! And the colour is fine too. I did a bit of google research and it seems to be okay. It may have been the oven was too warm? I can't stomach the smell but do you think I could hide it in smoothies?

ReplyYes probiotics are definitely good for little ones, big and small. It's hard to say, it really depends on the brand of coconut milk you're using. I still buy coconut yogurt for convenience and then skip a week buying it when I've made this delicious recip.
How about if i cant buy probiotics..just want to eat it without probiotics...do the step change???
ReplyYou'll need to add something to start the culturing process. You can use the juice from a jar of raw sauerkraut or kombucha. Hope that helps!
Joy, when you say to put into an oven that is off; are you referring to a gas oven? An electric oven wouldn't be warm at all. Is there a min/ max temperature it should be in? I have an Instant Pot and make cows milk yogurt quite a bit but want to switch to healthier eating. The Instant Pot is 108 degrees on the yogurt setting. Is this a good temperature for coconut yogurt?
ReplyI have an electric oven, which because it's like a little box is typically a little bit warmer than my home. So it's not "on" but it always feels a little warmer. If however you live somewhere warm all year round then your countertop is probably fine. I'm not sure about an Instant Pot because I don't have one so I can't advise you, sorry. But my guess is you could follow the same instructions as cow's milk yogurt. Let me know how it goes!
Hi Joy, Love your recipe! My coconut fat was sooo hard when I scooped it out after being in the fridge. The organic coconut milk I used had fat but it didn’t indicate if it was full fat. Has this ever happened to you? Thank you kindly.
ReplyYou mean after the yogurt was made? Yes this can happen. Just let it sit on your counter for about 5 minutes and it should melt enough to scoop. Enjoy!
Made my first batch following your recipe, turned out great. Kind of difficult finding coconut milk at our local grocers, though. Went to an Asian market, wow, all kinds of coconut products. Bought some coconut cream, did not have to separate the cream off the top like in your recipe since it's all cream, made my second batch using the cream, let it sit in the over for 24 hours, not 12, came out even thicker more like Greek yogurt consistency. Search online for other recipes, most all say to let the yogurt ferment in mild heat like a yogurt maker, crockpot, etc. Have you tried the heat method? Also, one recipe called for a 1/4 teaspoon of sugar to aid the fermentation process. Your opinion on this?
ReplyI haven't tried the heat method, only cause I wanted to keep it as easy as possible. However, it would probably ferment faster with a little heat. Yes you can add that but there are natural sugars in the coconut milk that will be food for the bacteria. I haven't found added sugar is at all necessary, so you can skip it.

ReplyHi Joy! I made your yogurt the other day but I must have done something very wrong because my yogurt turned super runny and gave me a tummy ache! K here's what I did. Hoping you can steer me straight. 2 cans of full fat coconut cream, scooped out cream and mixed in probiotic. I poured it into sterilized jars and placed in my yogurt maker (which is basically a warm plate with a lid that you set the jars in). The next day the thick cream turned super runny. Silly me ate it and well...things didn't turn out great for me. Where must I have gone wrong?

Hello. My experience. The first time I made this used all the liquid and it was runny. I have Lyme and Candida big time and was anxious to have something sweet. The second time i used the cream and saved the liquid. I put antibiotics and out overnight in oven. I added some vanilla and stevia. It was really good. But then stored it in a glass bowl with the lid in the refrigerator. It became hard and chunky! So I put it in my Vitamix and added the liquid. Now it is back in the fridge. Please advise. What seems so easy has become difficult for me. Thanks 🙏🏻 Antoinette
ReplyIt can get hard in the fridge when the fat in the coconut solidifies. At room temperature however, it will begin to melt and soften. I would suggest leaving it out of the fridge for about 10 minutes. Enjoy!!

ReplyYou'll have to check how many CFU is in a scoop. Typically a probiotic powder should come with a little scooper and the label will state how many probiotics per serving. Then use the same amount as my recipe. Enjoy!

ReplyIt really depends how much fat is in there, but yes you may need to leave it out for a few minutes before you eat it. That's fairly normal :)
I made this yesterday and it turned out delicious! It was runny by the end of 12 hours, but once overnight in the fridge was the perfect consistency! I don’t like the big tang of Greek yogurt and struggle to like it, and found that this wasn’t very tangy in comparison - I love it! BUT - I’m wondering if I did something wrong! I only had 3 capsules of probiotics left, so there is 15billion less (ha - sounds dramatic!) and I wonder if that’s the reason or if it’s just not as tangy - (amaZing if so! Ha!)
ReplyGlad you loved it Jessica! It's very hard to say. Different bacteria will yield a different result. Also, other factors such as the temperature in your home can greatly affect the outcome too.

Which Chas do you use? I tried the full cream and it does not separate in the fridge so when I added the probiotic it remained too runny. Now I have a can of Chas premium coconut milk in the fridge and again the cream and liquid are not separating therefore I think the same will happen and I’m not getting thick coconut yogurt?
ReplyHmmm, I haven't made it for a couple of months now because I've been buying coconut kefir lately. But try Thai Kitchen or Native Forest, they separate really easily if you're having trouble with Cha's. I just really love the taste of Cha's.
Hello! I’ve made this recipe before with Native Forest and it has turned out great! However, I would like to avoid guar gum, so I thought I would give Cha’s Organics a try. I bought the Premium and Cream types, but after being refrigerated (and before, for that matter) the “cream” is chunky and curdled-like, not smooth as in your video. After adding probiotics and allowed to ferment, the consistency is the same. Very chunky. Is this normal for Cha’s Organics because the gum is missing? Thanks!
ReplyIt's possible they've changed it because it was Cha's I used in this video so that might be what happened. But yes it's very normal to have a different result and even a different result from one time to the next with the same ingredients because culturing/fermenting is not an exact science. There are so many factors that come into effect. I would say the most important thing is that it tastes good!

Instead of putting coconut cream with probiotics in oven over night could it go in electric food dehydrator over night on very low temp?
ReplyHmmm, I'm really not sure as I haven't tried that myself. It may be too warm but that would do 1 of 2 things, it will either make it ferment faster or it will grow mold. If you do try it, please let me know!
I have tried making this with 2 x 400 mL cans of Cha's organics Premium coconut milk and 4 x 15 billion genuine health probiotic capsules and it still turned out runny.
ReplyYou can always drain some of the liquid and that can help it thicken. But the challenge always is that culturing and fermenting foods is not an exact science. If you pop it in the fridge it should solidify. Try that and let me know how you make out :)

Hi, I didn't have coconut milk but used an actual can of coconut cream. I let it sit for 12 hours in the oven but it didn't taste tangy like yogurt. Also it's still watery. I think I messed up. Can anyone help? I hate to throw it out.
ReplyIt's possible that you need to let it sit a little longer. What brand of probiotics did you use?
I used Genestra. How much longer do I have to let it sit?
ReplyIt can take 12 to 24 hours depending on how warm your home is. Sometimes it doesn't work if the probiotics are not alive. However, that's a decent brand so I don't feel concerned it's a faulty probiotic. Give it another 12 hours.
Can I use the Cha’s light coconut mil in a can instead of full fat?
ReplyYes that should work, it just might not be as creamy.
Hey Joy! So I added the maple syrup and vanilla extract when I mixed everything in and was gonna not put in the oven overnight. Just realized it said to mix in vanilla and maple syrup after! Will it mess up the process?
ReplyOh shoot! I think it will still ferment but you'll have to watch it closely because the sugars in the maple syrup will provide an abundance of food for the bacteria so I'm not sure if this means it will go bad too quickly. It should have a tangy taste and yogurt-y smell. If you've got that tomorrow, then you're in the clear! I will look at the recipe again and see if I need to update it too make it more clear.
Hi Joy I’m assuming you cannot follow this recipe and push yogurt button on insta pot? I have no clue. Lol But when making your way , after keeping the can in fridge overnight,app how much cream comes off the can ? 1/2c , 1c? And I assume o throw away the thin stuff ? Tnx
ReplyI'm not sure because I don't have an insta pot. It really depends on the brand of coconut milk you're using and how fatty it is. I would say the Chas's brand is a little over half cream and then coconut water if memory serves me correct!

hi Joy. technical difficulties :( we bought 2 cans of Chas organic premium coconut milk , i thought thats what you suggested? sooo, making now, not even close to how thick yours was , we got close to half a can of the thick stuff if that, and doesnt look at all like the amount you got in the bowl (2 cups ) . it was in fridge for a couple days at least. and 1 can was super hard and crumbly, the other was ok but not thick and creamy looking like yours. help. !!!! :) tnx

I looked at both natures and healthy planet , never saw a can that said FULL FAT. can you tell me exact one you used please. ? also, 1 can came out really hard from fridge, other looked fine , we did let it sit at room temp to soften, took a while ,added the probiotics , in fridge glass bowl, and a FLOP :( not a lot in bowl( we didn't get a lot of cream from cans and it was runny, this is tricky business and my cans were 10$ for 2 not cheap, any suggestions for next crack at it ? :) tnx
ReplyHi Sue, if your fridge is really cold then the fat in the coconut will solidify. Did it eventually soften up? It's the same how like how butter is cold in the fridge but softens up on the counter. That seems strange you didn't get much cream from the cans though. Did you refrigerate the cans of coconut milk before making it? That will make it easier to separate the fat from liquid. Culturing foods is not an exact science and many factors can alter the outcome -- the temp in your home, how sterile your home is, the brand of probiotics you're using etc.
Did it smell/tasty tangy? If yes, then you've got yogurt!

ReplyHi! Normally I make this and it turns out great. Lately, my coconut milk even after putting it in the fridge does not separate the cream from the milk. I use the Chas full fat coconut milk- could it be that the cans are not 'fresh' anymore?
ReplyI would suggest contacting Cha's to ask them if there is any change in their formulation but to my knowledge there hasn't been. Worth looking into though!
