Sweet Potato Toasties Three Ways

Sweet potato as a vessel for your favourite toppings!? Sign me up!

Okay so I had to jump on the sweet potato toast train because I LOVE sweet potatoes and it's a fantastic idea I mean, sweet potato toast instead of boring 12-grain toast? Sign me up! It's far more nutrient-dense, naturally gluten-free and paleo-friendly too.

My affection for sweet potatoes grew into a full-blown love affair when I was pregnant with Vienna. I ate my fair share of sweet potato wedges, which is probably why V loves them so much! She's gonna love these toasties too, when she can eat crunchier foods. 

I like to keep things interesting, so I created three different toasties. Let's call them toasties from now on shall we? I piled plenty of flavourful ingredients on top because there is such an abundance of foods at farmers markets right now. I've been feeling so inspired since I got back from Austria and have been creating so much goodness in the kitchen. Wait till you see what I've got in store for you next week! (Hint: it involves burgers and beets.)

I topped the first toastie with a navy bean salad and broccoli sprouts, is your mouth watering yet?

Since I had some goat cheese, I decided to slather that on the second toastie and then add sliced cucumber and fresh organic strawberries. And of course, I had to do a breakfast toastie with sunflower butter, banana and cinnamon. If my Instagram account is any indication, this is a breakfast staple!

You don't have to be gluten-free or paleo to enjoy these. Love real food? Then you're gonna love this recipe.

Ingredients
  • 1 large organic sweet potato, sliced lenghwise
  • Optional: 1/2 tsp ground cinnamon
  • Optional: Pinch sea salt and pepper
  • 1/2 tsp extra virgin olive oil
Instructions
  1. Slice sweet potato lengthwise about 4 millimetres thick. Depending on the size of the potato, you may get 6 toasties.
  2. Preheat oven to 350F degrees. Grease or place parchment paper on a baking sheet. Place sweet potato toasties on a baking sheet.
  3. Depending on which toastie recipe you may below, you can decide whether you'll season with cinnamon or sea salt and pepper. Give a little drizzle of extra virgin olive oil.
  4. Bake for 30-35 minutes until they are fork tender. You may wish to cook them longer to get them crusty or you could simply pop them in your toaster just before you dress them up. They will cook faster if they are cut thinner so check them at 25 minutes to make sure they don't burn.

Ingredients
  • 1 can of cooked navy beans, organic
  • 1/2 red onion, finely chopped
  • 1 garlic clove, minced
  • 2 stalks celery, chopped
  • DRESSING
  • Squirt of lemon
  • Sea salt and pepper to taste
  • Drizzle of extra-virgin olive oil
  • If it needs some more acid, then add a few gluggs of red wine vinegar (let your taste buds tell you)
Instructions
  1. Put the cooked beans into a large salad bowl. Using a potato masher, mash some of the beans. Add the remaining ingredients, including the dressing. Spoon over top of sweet potato toastie.
  2. This recipe will make more than enough that you can enjoy the rest as a salad.

Next up is my strawberry, cucumber and goat cheese layered toastie.

This combo is a perfect match. I've been so inspired by local strawberries lately that I just had to include them. However, this toastie would be just as nice with raspberries or blueberries. Here's the recipe:

Ingredients
  • 4 tbsp soft goat cheese
  • 8 slices of cucumber
  • 4 sliced strawberries
  • Dried basil
  • Pepper
Instructions
  1. Slather sweet potato toastie with goat cheese. Layer with cucumber and then strawberries. Top with dried or fresh basil. Season with pepper.

Notes

The ingredients are enough to make 2 toasties.

And finally, a toastie that's perfect for breakfast time: the sunflower butter and banana comfort toastie! I call it a "comfort" toastie because this combo is my healthy comfort food.

Ingredients
  • 4 tbsp sunflower seed butter
  • 1/2 banana sliced
  • 1/2 tsp ground cinnamon
Instructions
  1. Slather 2 toasties with sunflower butter. Top with banana and sprinkle with ground cinnamon.

Notes

Almond butter would be tasty on this toastie too.

For a quick "toastie", I tried putting the sweet potato slice in the toaster and ran it through twice. It turned out pretty tender, but I was still able to pull it out of the toaster without a mess. Thanks for the topping ideas. They all sound delicious!!

I was excited to try because I do like sweet potatoes! Unfortunately I thought the sweet potato would actually get toasty. So I was not a happy camper about that. But the sunflower butter & banana on it tasted yummy. Not sure if I'll try toasties again. Unless.......wait. Did I miss a step? Is there a way to make them toasty?

They are lovely. I've seen many toasted sweet potato recipes like this. It's really interesting when we can create everything on the potato slices. I'm so excited for my first time making it soon xD
