This Watermelon Cucumber Salad is the perfect dish when it's hot outside and you need to cool off. It's super easy to whip up and it's always a crowd pleaser. I love making this when we are BBQ'ing burgers, like these ones.
The health benefits of this flavourful and healthy salad include:
- Hydrating: Both watermelon and cucumber are over 90% water, making this salad incredibly hydrating.
- Rich in Antioxidants: Watermelon provides lycopene, an antioxidant that supports heart health and may reduce inflammation.
- Digestive Aid: Cucumber and mint promote healthy digestion. Since cucumber is high in water and fiber, they help maintain regular bowel movements and prevent constipation. The fiber also promotes the growth of healthy gut bacteria. While mint, being known for its soothing properties, can relax the muscles of the digestive tract, reducing bloating and discomfort. It also stimulates bile production, which aids in the digestion of fats.
- Refreshing and Cooling: The high water content and lime juice make this salad perfect for staying cool in the summer.

ReplyWatched you Live and had to try it, it's so refreshing and delicious. I'll be making it again for sure! Especially with the size of watermelon I bought :-)

Hi Joy! Have NEVER BEFORE added anything to my beloved juicy watermelon; TBH - I wasn't sure if this recipe would work out at our house. And being so unsure of how it would go (with the feta, cucumber and evoo - no way!!!), I didn't even take a picture of the salads before my husband and I ate it yesterday afternoon. Oh my - results: This afternoon, I found myself right back at the watermelon bin getting stuff to make it all over again! We both LOVED it. So simple to make, HYDRATING (as you mentioned), so cooling to get through these oh-SO-hot summer days here in Jersey! Thanks so much for this DELICIOUS recipe AND the video to go with it (since I tend to be a visual learner).
ReplyYay! So glad you and your family liked it, Dawn! It's so perfect for hot summer days. Thanks for sharing :) Heather- Joyous Health Team
