Note from Joy: Doesn't this salad just look gorgeous? This recipe is from my friend Lynsey Walker. Lynsey's a super-talented food stylist and photographer who helped me during the photoshoot of my upcoming Joyous Detox book. The great thing about Lynsey's recipes is that because she focuses on using healthy, whole foods, you'll end up feeling as good as her photos look after you eat!
This recipe will be featured in my upcoming post-pregnancy e-book. All those deep rich colours mean this salad is packed full of phytonutrients for new mamas, or for anyone who just wants to feel more joyous! Here are just a few:
Spinach: A great plant-based source of iron, calcium and folate. Other leafy greens are great too, but spinach is particularly rich in much-needed post-pregnancy nutrients.
Blackberries: The darker the berry, the more antioxidants, like anthocyanins, you'll find. This puts blackberries up near the top of the antioxidants.
Almonds: Rich in monounsaturated, heart-healthy fats and vitamin E, which will help nourish your skin after the ravages of post-pregnancy hormones.
Red onions: Higher in flavonoids than other types of onions (which are pretty high in flavonoids to begin with).
Manchego cheese: Made with sheep's milk, which is less likely to trigger food sensitivities and easier to digest than cow's milk.
