Dear Joyous Readers!
I have updated this recipe and you can find it here.
I know many of you were excited on Instagram when I posted the photo above of my dessert on Sunday night. Lucky for me, my parents came to town to visit on the weekend to celebrate Walker's birthday with us. My mom, being the incredible baker she is made an epically delicious flour-less chocolate cake. It was soooo perfectly chocolatey, incredibly moist and my taste buds were singing with JOY!
Ma McCarthy totally has a knack for converting recipes to more healthy versions. The original recipe is from Quinoa 365 but this version is joyously-approved because of the healthy swaps my mom made. Now I'm not gonna lie to you and tell you the sugar content is ideal but you can make your own modifications as you see fit. You only have a birthday once a year and this is a worthwhile indulgence
Note to mom if you are reading this: You are more then welcome to make these again for my joyous birthday in December! xox
Have a joyous day!
Joy

This sounds & looks awesome! You mentioned in a post yesterday that it could be make without using eggs. I have a friend who is gluten & dairy free & can't have eggs. What would I substitute for the eggs? Thanks!
ReplyHi Candee, You can substitute a mixture of 2 tbsp flax or chia seeds + 1/3 cup of water for each egg you're looking to replace. Let the mixture sit for a few minutes until it becomes gelatinous, then toss it in. Kate - Joyous Health Team
Hi Joy, I have made this cake from the 365 book and it was amazing. But i was not atvall happy with the amount of refined sugar in it. Thanks so much to you and your mama for tweeking the recipe! I will make this new version for fathers day! :)
ReplyHi Joy, this looks amazing!!! I am allergic to eggs however - do you think using flax or chia "eggs" would work as a substitute? Thank you!
ReplyHi Leah, Absolutely! Flax or chia egg substitutes should work fine here. Let us know how it turns out. Kate - Joyous Health Team
Alright.....since Walker is my fav son-in-law I made him the cake for his b.d. and since you are my fav daughter I will make one for your b.d. too!!! xxxooo
ReplyYou're the cutest mom! xox
This would be tasty with homemade (berry) chia jam on the side.
ReplyDo you have to use a food processor or will a hand mixer do the job?
ReplyHi Hinna, A hand mixer might be a little more labour-intensive than a food processor, but it should get the job done. Kate - Joyous Health Team
Hi Joy, That's a great recipe. I think you will like my vegan chocolate chia pudding as well. Kate-greek-nutrtition blog
ReplyThe best recipe ever! I love this cake!!
ReplyGlad you are enjoying it!
This cake is divine! I made half a batch into cupcakes to give it a try before making it for my son's birthday (for family not familiar with gluten-free baking) and they were glorious. Thanks so much! This recipe will my go-to birthday cake recipe!
ReplyYou're very welcome, Lee Ann! Glad we can be a part of happy, healthy birthdays! Kate - Joyous Health Team
So delicious. I tried it-thanks so much for sharing this with us. It is so much fun to try some of the recipes that health conscious foodies create. It is really turning old fashioned baking on its head. I am in my 60s and just went gluten and dairy free. It has made a dramatic difference to my arthritis. Who knew!
ReplySo glad to hear it's helping, Anne! Kate - Joyous Health Team
Such an easy recipe! The cake is in the oven, can't wait to try it!!!
ReplyI made this cake last night and it was AMAZING!! You would never know it was made without flour! Served it with coconut whipped cream. Then ate it again for breakfast with my tea this morning! This will definitely be my go-to cake! Thanks so much!
ReplyI love the cake but my "critics" do not like of the texture of the quinoa. Can I substitute quinoa flour or almond meal?
ReplyHi Joanna, Flour substitution can be a bit tricky, so we can't guarantee any particular swap will work, but you're welcome to use this chart as a guideline: http://www.joyoushealth.com/blog/2015/01/12/flour-substitution-chart/ Let us know how it turns out! Kate - Joyous Health Team
Can I use coconut milk instead of almond milk? I'd like to make it nut free. Thanks.
ReplyHi Karen, Sure, but you'll want to make sure it's the non-canned, thinner type. Kate - Joyous Health Team
My all time favorite chocolate cake! I do have to admit... I top the cake with a 70% chocolate ganache. Delicious!
ReplyCould I use tri-colour quinoa for this? I don't have any white on hand but need to make a cake for tomorrow! Or could steel cut oats work as a sub, or would they be too dense?
ReplyHey Jessie! Looks like you were able to answer this question yourself, but I'm so happy to hear it worked out :) Hope everyone enjoyed it! Rachel - Joyous Health Team
This is an incredible recipe! I made it with tri-colour quinoa as I had no white quinoa on-hand, I just cooked the quinoa a few minutes extra, and it turned out beautifully!
ReplyHey Jessie! That's awesome! So happy to hear it worked out great for you :) Good to know for future reference too! Rachel - Joyous Health Team
Hi Joy, I have made this recipe many times
ReplyIt's a gem!
