I made pancakes for breakie this weekend (BIG SURPRISE -- if you know me, you know I'm a pancake monster!!) and as luck would have it the timing was joyously perfect because this Tuesday is Pancake Tuesday! These gems are dense, full of flavour and very fulfilling, in fact you will be satisfied for hours.
I'm happy to tell you these p-cakes have no eggs. Not that I have anything against eggs, but more and more people are asking me what to substitute eggs for in recipes. These pancakes have no gluten, dairy or refined sugar either.
The recipe inspiration for these p-cakes came from my friends at Genuine Health. You can find the original recipe here, but I made a few changes to it.
I suggest if you don't have a big family to cook for that you refrigerate the extras and then pop them in the toaster for breakfast the next day. You'll have gourmet breakfast in just a few minutes!

ReplyYou could try using buckwheat flour. I haven't experimented with this recipe, so it would be an experiment. The plant based protein powder is very nice because it's 5 different plant proteins.
I didn't have the protein powder but did have left over organic carrot pulp(from juicing) which I didn't want to waste... Turned out absolutely delicious!

Replyoops forgot to ask my top sensitivity is PEA. many powders have this. I bought a hemp protein powder for smoothies. would that be ok to use and would the flavour be masked.. ?
The protein powder I use most often is gluten-free and dairy-free. I use Genuine Health's fermented vegan protein.
